Apricot Glazed Chicken

This is a new favorite, I do believe. Very quick, and very tasty.

Ingredients
1/3 c reduced-sodium chicken broth
1/4 c reduced-sugar apricot preserves
1/2 tsp reduced-sodium soy sauce
2 servings boneless skinless chicken breast
1/8 tsp salt
1/8 tsp pepper
2 tsp canola oil (OPTIONAL - just use a nonstick skillet and spray)
1 TB thinly sliced green onion
Directions
In a small bowl, combine broth, preserves, and soy sauce; set aside.
Sprinkle chicken with salt an dpepper.
In a large nonstick skillet, brown chicken in oil (OPTIONAL - use nonstick spray) on both sides.
Add broth mixture to skillet; bring to a boil.
Reduce heat; cover and simmer for 8 - 12 minutes or until chicken juices run clear, basting occasionally with pan juices.
Remove chicken from pan and keep warm; increase heat and allow sauce to continue to thicken.
Serve chicken w/ sauce spooned over it; sprinkle with green onion.
