1 ¼ c. buttermilk or sour milk or use 1 cup plus 2 TB evaporated milk and 2 TB lemon juice or white vinegar
1 ¼ c. flour
2 TB soft shortening or oil
1 tsp sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
Try adding to the batter:
Apple & cinnamon
Corn & onion powder
Try serving pancakes with:
Cinnamon & sugar
Heat griddle slowly while mixing batter. To test griddle, sprinkle with drops of water. If bubbles "skitter" around, heat is just right. -grease griddle if necessary-
Beat egg. Beat in remaining ingreadients until batter is fairly smooth. Pour batter from the tip of a large spoon for round pancakes.
Turn pancakes as soon as they are puffed and full of bubbles, but before the bubbles all break. Brown on the other side, then remove from griddle.
Keep pancakes hot by placing between folds of a warm towen in a warm oven - - or eat them fast!
Makes 16 4" pancakes.
To make sour milk if you don't have buttermilk...
Put 1 TB vinegar or lemon juice into a cup, then fill it with milk or cream (or evaporated milk). Let stand a few minutes.
