Potato Soup

Ingredients
1 small piece of fatback OR several bacon slices
1 onion, chopped
3 softball-size potatoes, cut into bitesize pieces
about a quart of water
1/2 tsp. salt
about a quart of milk
Directions
Cook and brown the bacon or fatback.
Drain all but about 3 TB of the fat from the pot.
Saute the onions in the remaining fat until they are tender.
Remove the pan from the heat; add potatoes and water; return to the heat.
Add salt, and cook until potatoes are soft.
Add the milk and simmer until the soup thickens.
If it's not as thick as you'd like, take out some potatoes, mash them up, and return them to the pan.
For color, add cooked carrots or peas.
