Mom's Meatloaf

Description:

There's oh-so-many variations - bake with hard-boiled eggs in the center, or put spinach (like thawed frozen spinach) down the center, making stuffed meatloaf. Or, put cheese cubes inside.

Note: this is a recipe that's easily removed from the menu. If your plans change, you can drop this from the menu w/o having to worry about what you'll do with the ingredients; they can all be kept for future use (but if the meat is already defrosted in the fridge, you can only keep it there for 2-3 days).

Ingredients

2 to 2 1/2 lb ground beef

1 egg

2 big handfuls of oatmeal regular or quick-cook (or crushed Ritz crackers, crused saltines, bread crumbs, bread cubes, etc.)

1/4 to 1/2 cup ketchup (Mom said it's "one big squeeze ... like squeeeeeeze ... that's it." 

1/4 tsp garlic powder (Mom said sprinkle once all across the bowl)

1/2 tsp onion powder (Mom said sprinkle twice all across the bowl)

1 to 1/2 tsp salt and pepper

Directions

Preheat oven to 350°

Put beef, egg, oatmeal, and ketchup in a large bowl together.

Sprinkle the garlic, onion, salt, and pepper over the bowl

Mush it all up together - it's messy, but honestly your hands work best for this.

Note: if you have kids, let them do this part - if they're like me or my sisters, they'll think it's great fun.

 

If you're making it for a lot of people, put it in a 13 x 9 pan, which will cook for 30 minutes.

 

To cook for your family and make it look pretty, put it in a loaf pan, which will cook for 1 hour.

 

To make it fastest, put balls of meatloaf in a muffin pan; this should bake about 20 minutes. What's great is this freezes really well. Even though there's only 2 of us, I'll make the whole recipe. Then, we have dinner for one night plus six lunches for me to bring to work.

 

If you're camping, wrap balls of it in tinfoil and cook it in coals over to the side (like coal potatoes).
