Molasses Cookies
Submitted by: JustRightMenus
Description:
These are the kind that come out big and flat and dark ... I've been told they're like Moravian cookies.
I remember having some like this the year i got a bean back chair for Christmas. I spent time that Christmas reading a new book I got, sitting with a cup of hot tea and these molasses cookies. Mmmm.

This particular recipe is one I found online, in an NPR article, labeled "Dorothy Smith's Molasses Cookies."
Ingredients
Group 1
3/4 c. melted butter
1/4 c. molasses
1 egg
1 c. sugar (plus extra for dipping before baking)
Group 2
2 tsp. baking soda
2 c. flour
1/2 tsp. cloves
1/2 tsp ginger
1 tsp. cinnamon
1/2 tsp. salt
Directions
Heat oven to 375°.
Combine Group 1 (butter, molasses, egg, and sugar). Mix thoroughly.
Separately, mix Group 2 (dry ingredients).
Add Group 2 (dry) to Group 1 (wet). Beat well.
Chill at least 4 hours.
Shape into one inch** balls. Dip in sugar. Place on greased cookie sheet and flatten with a fork.
Bake at 375° for about 6 minutes, until flat and dark brown.
They'll be slightly crunchy on the outside & chewy on the inside.
**Seriously, measure it. December 2006, I did not use 1" balls, and I got 22 HUGE cookies. December 2007, I used 1" balls. For a double recipe, I got 121 cookies. And you didn't need a fork & knife to eat them.
