Rice Stuffing

This goes very well with roast poultry.

From a recipe card I picked up at the grocery store in 2004. I no longer have the actual card, so I don't know more than that.

Ingredients

2 c. dry brown rice

1 tsp. salt - optional

1 TB butter - optional

8 oz. mixed dry fruit

1 tsp. chopped fresh ginger

1/2 c. chopped fresh parsley

1/4 c. orange marmalade

1 tsp. salt

Directions

Combine dry rice with 4 c. water.

If you'd prefer, you may add 1 tsp salt and 1 TB butter.

Bring to a boil.

Cover tightly, cook on low for 40 minutes or until rice is tender.

Add all other ingredients and serve.
