Granola

Description:
I have found this recipe is pretty forgiving. I have used less brown sugar and unsweetened coconut to make it less sweet but when I do make it too sweet, it's a great dessert :) I have also left out seeds and/or nuts when I didn't have them. I am not a fan of raisins but I put dried strawberries from my garden in my granola and I think it's great!

Ingredients
6 c. oatmeal (rolled or quick)
1/2 c. br. sugar
3/4 c. wheat germ
1/2 c. flaked coconut
1/4 c. seeds (sesame, sunflower, whatever you have/like)
1 c. chopped nuts (walnuts, pecans, whatever you like/have)
1/2 c. dried milk (optional)

2/3 c. honey
2/3 c. veg. oil
2 T. water
1 t. vanilla

1 c. dried fruit (cranberries, raisins, whatever you like)
Directions
Oven temp: 300 degrees
Baking time: 30-35 min.
Mix first 7 ingredients in a LARGE bowl. Mix next 4 ingredients separately and then add to dry. Turn onto 2 LARGE shallow pans. Stir every 10 minutes during baking. Bake until lightly toasted. Stir occasionally while cooling. Crumble. Add dried fruit. Store in air tight container (though I just store in the freezer - it keeps it fresh forever and it's not like it freezes together, you have already crumbled it).
