Stuffed Porkloin

Wonderful!! Buy a whole porkloin (or 1/2) when they are on sale...you don't want to start with one that is already marinated.

Ingredients
1/4 c. butter
1 onion, finely chopped
3 cloves garlic, minced
10 oz spinach, defrosted adn wrung out
12 oz bacon, cooked + crumbled
5 oz parm cheese
1/4 t. salt
1/4 t. red pepper (or cayenne)
Directions
*Get hubby to butterfly pork and pound flat*
Oven temp: 475 then 325
Melt butter. Saute onion and garlic for 5 min. Add spinach and cook 3 min. Stir in rest of ingredients and cook until cheese melts. Roll filling in pork and tie TIGHT. Cook at 475 for 20 min. Reduce temp to 325 and cook 30-40 min. (Internal temp approx 160)
We have baked sweet potato with this and it is SOOO good!
