Minestrone Soup w/ Ham Bone

Ingredients
1 c. navy beans, soaked overnight in water
1 ham bone
14 oz. canned tomatoes
1 large onion, chopped
1 green pepper, chopped
2 stalks celery, sliced
1 c. macaroni noodles (elbow pasta)
1/4 head cabbage (optional)
1 package frozen mixed vegetables
salt and pepper to taste
Parmesan or Romano cheese - best if use fresh grated hard cheese
Directions
Put beans, onion, celery, and pepper in a large soup pan with the ham bone and cover with water. Add tomatoes to the mixture.
Cook on medium heat (not boiling, though) until beans are soft.
Add mixed vegetables, pasta, and cabbage. Add salt and pepper to taste.
When the pasta is tender, spoon into serving bowls; sprinkle cheese on top.
This goes well with nice, crusty French bread.
