Grilled Prosciutto-Wrapped Shrimp

Ingredients
24 jumbo shrimp, uncooked
12 slices (about 4 oz) paper-thin prosciutto (it's about /lb ... you may want to use bacon instead)
Marinade
6 TB extra virgin olive oil
4 TB chopped fresh rosemary leaves
2 TB sliced garlic cloves
1/2 tsp crushed red pepper flakes
2 tsp freshly grated lemon zest
salt and pepper
Optional:
lemon wedges
rosemary sprigs
Directions
Peel and devein the shrimp, leaving the tails on.
In a large bowl or re-sealable bag, mix the marinade ingredients. Add the shrimp and toss to coat.
Marinade for a *maximum* of one hour.
Preheat barbecue grill or broiler. Oil the hot grate to help keep shrimp from sticking.
When ready to grill, remove the shrimp from the marinade and wrap each in 1/2 a slice of prosciutto (having cut the prosciutto in 1/2 lengthwise, so it's long and skinny). Don't worry about how you're going to get the prosciutto to stay on the shrimp; it's so thin that it'll easily stick to itself.
Place shrimp on hot grill and cook 2-3 minutes on each side.
To test for doneness, cut one in half; shrimp should be opaque. Remove all from grill when done.
To serve, arrange shrimp on a warm serving platter with lemon wedges and fresh rosemary sprigs.
