Pineapple Chess Pie

I've made this only once, and it really stuck to the pan... next time I'm going to try making this a bit differently. Instead of using a pre-baked crust, I'll give the pie in the oven about 15 minutes at 425° and then 25 minutes at 350°. I'll let you know how that works out, but it might be a while before we have this again. It's great, but it's surely not on the healthy list.

Ingredients
1 c. crushed pineapple, drained
2 c. sugar
1 TB cornstarch
1 c. coconut
4 eggs
1 stick of margarine, softened
1 tsp vanilla
1 pie shell, baked
Directions
Preheat oven to 350°.
Mix all ingredients and pour into pie shell.
Bake for 50 minutes, until pie just "jiggles" a little bit when moved.
