Ingredients
6" piece of cucumber
7 oz strained yogurt
1 garlic clove, crushed
1 TB extra virgin olive oil
2 TB thinly sliced fresh mint leaves
salt, to taste
Directions
Peel the cucmber, grate it coarsely into a colander, and press out most of the liquid.
Add to the yogurt with the garlic, olive oil and mint.
Chill.
Stir in salt to taste just before serving.
