Chicken in Mushroom Sauce
Submitted by: JustRightMenus
Description:
I haven't made this one yet - it's on an upcoming menu, so it may be edited after I try it out.
The original recipe says to microwave the chicken... I have *never* enjoyed microwaved chicken, so I'll be baking it. I'll keep you posted on how this goes.

Ingredients
1/4 # sliced fresh mushrooms
1/4 c. chopped green onions
1/2 TB butter
2 TB all-purpose flour
1/4 c.reduced-fat plain yogurt
2 TB water
1 TB reduced-sodium chicken broth
1 tsp. reduced-sodium chicken bouillon granules
1 pinch black pepper
2 boneless skinless chicken breast servings
Directions
Spray a nonstick pan, heat to medium, and cook the chicken breast 5 minutes on each side.
While the chicken is cooking: In a microwave-safe dish, combine the mushrooms and onions. Cover and microwave on high for 2-4 minutes or until mushrooms are tender; drain and set aside.
In the same dish, melt the butter. Stir in flour until smooth; add the yogurt, water, broth, bouillon, and pepper. Stir in the mushroom mixture.
Microwave the sauce at 50% power for 5 minutes.
When the chicken is done (juices run clear), place on a serving dish and pour the sauce over it.
