Roasted Chicken Quarters

Ingredients

3 TB lemon juice

1 TB olive oil (original says to use 3 TB, but 1 = plenty)

1/2 tsp. dried leaf thyme (as opposed to ground thyme)

1/2 tsp. Creole/Cajun seasoning

3 cloves chopped garlic

2 chicken quarters (with skin still on)

Directions

Preheat oven to 375°.

Combine everything except the chicken, salt, and pepper.

Wash the chicken and pat it dry with paper towels. Sprinkle it with salt and pepper.

Toss the chicken with the mixture you created.

Lay chicken in a roasting pan, bony side up. Pour remaining mixture around the chicken.

Bake for 45 minutes, flip chicken over, then bake for another 45 minutes.

You can tell if the chicken is done by piercing it with a fork. If the juices run clear, it's done.
