Ingredients
1 bag dry beans.
1/2 c. honey, molasses, or brown sugar
1/2 an onion, chopped
1 garlic clove, minced
1 tsp salt
Directions
Soak the beans overnight.
Change the water in the morning.
When you're ready to cook the beans, put them in the crock pot with 1 1/2" water above them.
You may add the salt, but be sure not to add any fat or sugar at this point.
Turn on low, and cook 10 to 12 hours.
When the beans are mostly done, you may add a bit of meat if you'd like, and the honey/molasses/sugar, and the garlic and onion.
Allow to cook a bit longer so those flavors may blend.
The easiest beans to cook are the big, flat limas. They can get soft even if you forget and add the meat too soon.
The next easiest are pintos.
Kidney beans are good with chili powder.
White limas go well served with pasta.
