Baked Onion Rings

Ingredients
1 pound sweet onions
3 egg whites
1 c. dry bread crumbs
2 tsp. dried thyme
1 tsp. salt
1 tsp. paprika
1/4 tsp. pepper
Directions
Cut onions into 1/2" slices; separate into rings and place in a bowl. cover with ice water; soak for 30 minutes. Drain.
Preheat oven to 400°.
In a small mixing bowl, beat the egg whites until foamy.
In another bowl, combine the bread crumbs, thyme, salt, paprika, and pepper.
A) Put 1/3 of the crumb mixture in a large resealable bag.
B) Dip a third ofthe onions in the egg whites; add a few rings at a time to the crumb mixture and shake to coat.
Repeat step A & B two more times.
Place rings on a baking sheet coated with nonstick cooking spray.
Bake at 400° for 20 minujtes or until lightly browned and crisp.
