Mini Meatloaf

These freeze great, too! Just drop into a freezer bag once they've cooled.

Ingredients
1 lb. lean ground beef
1 (6 oz) package stuffing mix
1 c. water
1 tsp. garlic powder
3/4 c. barbecue sauce
3/4 cup shredded cheese
Directions
Heat oven to 375°.
Mix meat, stuffing mix, 1 c. water, and the garlic powder.
Spray a muffin cup pan (12 cups) w/ nonstick spray.
Press the meat mixture into each cup.
Make an indentation in teh center of each mini loaf with a spoon; fill with sauce.
Bake for 30 minutes, or until cooked through to 160°.
Top with cheese, and bake for 5 minutes more - or until the cheese melts.
