Simple Chicken Soup

Ingredients
2 chicken thighs - with the skin & bones
1 tsp. salt
celery, carrots, leeks, onion, a little parsley, whatever you like in chicken soup - a bag of frozen mixed veggies can work well, too
1 handful of pasta (not spaghetti - something like min-ziti, elbows, cavatelli, farfalle, etc.)
salt & pepper
1/4 tsp. garlic powder
Directions
In a crock pot or on the stove, simmer the thighs in a big pot of water with the salt, all day.
When you're ready to make the soup, use tongs to remove the thighs from the pan. Remove the fat, skin, and bones from the meat; discard them. Chop the meat into tiny pieces, and return it to the pot.
Add the veggies and pasta to the pot, and turn up the heat. Add salt and pepper to taste, along with garlic powder.
Once the veggies and pasta are tender, you're done! Enjoy.
