Autumn Stew

1 lb. lean pork tenderloin in 1" cubes

2 medium sweet potatoes, peeled and cubed (2 potatoes = about 2 cups)

2 small onions, chopped

1 c. sliced carrot

1 avocado, chopped

2 garlic cloves, finely chopped

1 c. coarsely chopped cabbage

1 tsp Cajun seasoning (or just use a mixture of garlic powder, onion powder, paprika, and black pepper)

1 can chicken broth



Lightly coate the bottom of a large pot with nonstick spray.

Heat the pan (medium heat), then add the pork. Once it has cooked through and browned, add all the other ingredients.

Cover the pan, lower the heat, and simmer for 15 minutes.
