Baked Chicken Kiev

1/4 c. low calorie margarine or just use butter - your choice

2 TB minced fresh parsley

1/4 tsp. dried rosemary OR 

3/4 tsp. minced fresh rosemary

1/8 tsp garlic powder

1 pinch black pepper


4 boneless skinless chicken breast pieces

2 TB + 1 tsp. milk

3 1/2 TB fine breadcrumbs


Preheat oven to 400°.

Mix the butter and spices together. Form into four 2" sticks, and freeze them.

Flatten each chicken breast to 1/4" thick, while it's between sheets of wax paper or plastic wrap, with a meat mallet or rolling pin.

Lay one stick of the frozen butter at the widest end of each chicken breast, and roll it up. Fold the sides in first if the piece is very wide.

Secure the rolls with a toothpick or with string - just be sure to remove picks/string before serving.

Dip the rolls in the milk then in the breadcrumbs.

Bake at 400° for 25 minutes, or until browned.
