Sauteed Chicken Breast with Cucumber Salad

1 tsp. cumin seeds

2 cucumbers, peeled, seeded, quartered lengthwise, and sliced 1/4" thick

1 c. roasted cashews, roughly chopped

2 green onions, thinly sliced

2 tsp. fresh lemon juice

2 TB olive oil

1/4 c. chopped flat-leaf parsley

salt and pepper

4 chicken breast halves (boneless skinless)


Cook the seeds in a nonstick pan over medium heat until they are fragrant (about 1 minute). Transfer them to a work surface (cutting board), and allow them to cool. Then, coarsely chop them.

In a large bowl, combine the cumin, cucumber, cashews,  green onions, lemon juice, oil, parsley, salt, and pepper.

Thinly coat the pan used for the cumin with nonstick spray, bring it up to a medium-low heat, and cook the chicken for 6 minutes on each side.

Thickly cut the chicken breast crosswise, and serve it with the cucumber salad piled on top of each serving.
