Mac 'n' Goat Cheese

Creamy and a little more bitter than your usual mac and cheese. 

Servings: 4-6

Ingredients

 2 cups oat milk

1 cube veggie bullion

4 oz goat cheese

2 tsp basil

1 tsp oregano

1 or 2 shakes red pepper flakes

1 12 oz pkg pasta-whatever style you prefer

OPTIONAL

2 cups Spinach or Kale

1 cup Peppers & Onions

4-6 oz Chicken, cubed and prepared as you prefer

or

Ham, cubed

Directions

Preheat oven to 350 degrees.

 In a medium saucepan, boil oat milk, stirring in bullion and seasonings as it cooks.  As the milk and seasonings begin to boil, add goat cheese, stirring until the sauce becomes thick and creamy.  If you're adding vegetables to the dish, add them to the sauce now, simmering until vegetables are tender.  While you prepare the sauce, prepare pasta as normal.  

In a casserole dish, add pasta and gently stir in sauce.  If you're adding meat to the dish, add it now.  Bake for 15 minutes.

Baking the dish is optional.  It sets the sauce a bit; I prefer the dish a little more stiff.  If you prefer your mac and cheese a little more saucy, feel free to combine the ingredients and serve immediately.  This can be a great meal if you choose to add the veggies and meat, or a  perfect side dish to some broiled fish.
