Tilapia with Grapefruit Salsa

Ingredients
Marinade
1/3 cup unsweetened grapefruit juice
1/2 tsp ground cumin
1 garlic clove, minced
1/4 tsp grated grapefruit peel
1/8 tsp salt
1/8 tsp pepper
1/8 (or less) tsp cayenne pepper
2 tilapia fillets
2 tsp butter
Salsa
1/2 cup canned black beans, rinsed and drained
1/3 cup chopped pink grapefruit sections
1/4 cup chopped red onion
1 TB minced fresh cilantro
1-2 tsp chopped jalapeno pepper
Directions
Mix the marinade ingredients together, reserving 1 TB of the mixture to be added to the salsa.
Place the tilapia in a large resealable plastic bag; add remaining marinade. Seal bag and turn to coat. Refrigerate for 1 hour. ((OR, you can just cook the tilapia in the marinade on the stovetop if you don't have marinading time))
Combine salsa ingredients (remember to add the TB of reserved marinade) and refrigerate until serving.
Drain and discard marinade.
In a skillet over medium heat, cook tilapia in butter (or in a nonstick pan w/ cooking spray) for 4-5 minutes on each side or until fish flakes easily with a fork.
Serve with salsa.
