Pizza Dough

Ingredients

1 1/2 TB yeast

2 1/2 c. warm water

5 3/4 - 6 c. flour

3/4 tsp salt

 

Directions

Combine ingredients, adding enough flour until dough is no longer sticky.

On a flour-coated surface (a pastry cloth works great), knead the dough for 10 minutes. If the dough gets sticky while you're kneading, just sprinkle it with more flour. This usually happens to me.

Place the dough in a lightly greased bowl, turning it over once so all sides are greased. Place in a warm place to rise for 30 minutes. I like to set the oven to 100° while I'm kneading the dough, then turn it off once it gets up to temperature. Then I place the dough in the warm oven to rise.

This makes enough pizza dough for 2 rectangular cookie sheet pizzas or for 3 smaller, standard-size round pizzas.

Add sauce, cheese, toppings, whatever you'd like and bake for 20 minutes. I find it's best, after 10 minutes of cook time, to switch the pizzas, moving the top shelf pizza to the bottom shelf and the bottom shelf one to the top shelf.
