Vegetable Salad

Ingredients

Dressing

3 TB red wine vinegar

1 tsp Dijon mustard

1 tsp honey

1/8 tsp ground cumin

1/4 tsp Kosher salt

1 pinch freshly ground black pepper

3-5 TB canola oil

 

Salad

3 radishes, grated (about 1/2 cup)

3 medium carrots, grated (about 1 1/2 cups)

3/4 medium head green cabbage (about 1 lb.), thinly sliced (6 cups)

1/3 cup chopped fresh cilantro

Directions

In a small bowl, lwhisk the vinegar, mustard, honey, cumin, salt, and pepper. Gradually whisk in the canola oil until combined.

Put the radish, carrot, cabbage, and cilantro in a large bowl.

Pour in the dressing, and gently toss to combine. Season to taste with salt and pepper.

Refrigerate before serving.
