Yellow Squash Soup

I froze my leftovers from this soup and plan to use it as a base for chicken soup later in the year.

1 large onion, chopped

2 TB butter or extra virgin olive oil

6-8 yellow squash, chopped

3 c. vegetable stock

1/2-1 cup fresh basil

salt and pepper to taste


Saute onion on medium to low heat in butter until soft.

Add the rest of the ingredients, and cook until soft.

Then, blend all ingredients. You can use a hand blender right in the cooking pot, or you can blend the mixture in batches in a regular blender.

Try substituting dill for basil as well.
