Endive Pear Salad with Maple Vinaigrette

Description:
The Maple Vinaigrette is quite tasty; I plan to use it on other salads as well.

Ingredients
Dressing:
1 c. olive oil
1/3 c. cider vinegar
1/4 c. maple syrup
1 TB spicy brown mustard
1 head Belgian endive separated into leaves
1 Bartlett pear, cored and diced
1/4 c. candied walnuts
1/4 c. crumbled Gorgonzola cheese
salt and pepper to taste
1 green onion, sliced
Directions
Combine the dressing ingredients in a blender; blend until smooth.
Arrange the endive on a serving platter with the rounded side down so that the leaves act as little bowls.
Fill the endive with the diced pear, walnuts, and Gorgonzola cheese. Be careful not to overlfil if you want to pass these.
Carefully drizzle the dressing over the filling.
Season with salt and pepper.
Garnish with green onion to serve.
