Garlic Spinach

Ingredients
Fresh spinach
2 spring onions, diced
4 cloves garlic, minced (or use a garlic press)
2 TB olive oil
1 TB butter or smart start
Kosher salt
Black pepper
1/2 fresh lemon
Directions
Wash the spinach 3 times.
Stem the spinach, and roughly chop as uniform as possible.
Dice the spring onions and place with the garlic (put through a garlic press or mince) in the bottom of a large Dutch oven or large pot with 2 TB olive oil.
Let cook on medium heat for 3 minutes.
Add the spinach, and toss with tongs every few minutes to evenly wilt them.
When they are wilted nicely, add 1 TB butter or smart start.
Add salt and pepper.
Toss ingredients a few times.
Roll and cut in half a lemon; squeeze the juice of half the lemon over the spinach, and toss again. The lemon will cut the bitterness of hte spinach.
The key to this recipe is to make sure all the ingredients are mixed well.
