Salmon with Caper Relish

Ingredients
2 salmon fillets
a bit of butter, to brush the pan
8 oz chardonnay (or apple juice)
1 small sheet of parchment paper
1 c. diced tomato (1 small to medium tomato)
1 clove garlic, minced
1 pinch S&P
1 TB lemon juice
1/4 c. capers
1 TB chives
1 TB olive oil
Directions
Butter a baking dish, lay salmon on it.
Pour on the chardonnay.
Lay on a buttered piece of parchment paper.
Bake 12 - 15 minutes at 400°.
Mix together the remaining ingredients and serve them on the side, as a relish.
