Easy Shepherd's Pie

More involved versions are great, but this one sure is fast - - and we appreciate fast with a baby in the house!

Ingredients

1/2 pound ground lamb

1/4 onion, chopped

1 garlic clove, minced

1/2 c. beef or lamb stock

2 tsp corn starch

2 carrots, diced

1/2 c. frozen peas

2 servings instant mashed potatoes - you will prepare these according to package directions

1/3 c. shredded cheddar cheese

Directions

In a large skillet, cook the ground lamb with the onions and garlic until the lamb is no longer pink. While your lamb is cooking, prepare the potatoes.

If your meat was particularly fatty, drain it and return it to the pan.

Add the carrots and cook for 2 more minutes.

Whisk together the beef/lamb stock and cornstarch. Add to the pan. When it begins to thicken, add the peas.

Once the peas have heated through, split the mixture between two bowls. Top with the instant potatoes. Sprinkle on the cheese, and serve.
