We had this (or something quite like it) at Carrabbas Restaurant, so I hunted out a recipe online that was supposedly how they make it. I don't remember the exact source. This is definitely a "fancy dinner night" meal!

Ingredients
2 boneless, skinless chicken breasts
1/4 small onion, diced
1 1/2 cloves of garlic, minced
1/4 c. clarified butter (for a great explanation of how to make this, check out Cooking for Engineers: http://www.cookingforengineers.com/article/198/Clarified-Butter-II)
2 TB white wine
4 oz mushrooms, sliced
1/4 c. fresh basil, roughly cut or torn
2 TB lemon juice
2 TB unsalted butter
1/4 tsp black pepper
2 thin slices prosciutto (should be somewhat transparent)
2 pieces sliced fontina cheese, 2 TB ea. (or another easy-to-soften/melt cheese)
Directions
Grill (or broil) the chicken breasts, butterflied open.
Saute the onion and garlic in the clarified butter.
Deglaze the pan with the wine, and add the mushrooms, basil, lemon juice, butter, and black pepper.
Place 1 slice of prosciutto & one slice of cheese inside each chicken breast and fold it closed, securing with toothpicks. The cheese should be inside the prosciutto, which is inside the chicken.
Allow the cheese to melt (place in warm oven).
Serve wtih the mushroom mixture poured over the chicken.
