Cool Shrimp Salad (with cucumbers and dill)

Description:
A refreshing, cool summer lunch.
Servings: 2-4
Ingredients
1 pound cooked shrimp (peeled and deveined before cooking)
2 stalks celery
1 cucumber, peeled and thinly sliced
3 green onions
2 tsp olive oil
1 tsp red wine vinegar
juice of 1 lemon
1/2 TB fresh dill, chopped
1/4 tsp coarse salt
Directions
In a medium bowl, combine shrimp, celery, cucumber, and green onions.
In a small bowl, mix remaining ingredients, as the dressing.
Pour the dressing over the vegetables, and stir gently.
Refrigerate for at least 30 minutes to allow the flavors to combine.
