Roasted Cherry Tomatoes with Mint

Ingredients
1 pint cherry or grape tomatoes
1 TB extra-virgin olive oil
1/4 tsp salt
1/8 tsp black pepper
2 tsp finely chopped fresh mint
Directions
Toss together all but the mint. Bake at 425° until the skins of the tomatoes begin to split, 5 to 10 minutes.
Sprinkle with mint and serve.
