Roasted Eggplant

Ingredients

1 eggplant

1/4 c. olive oil

1 can tomato sauce

salt to taste

fresh or dried chopped parsley

A few sprigs fresh basil, chopped

1 TB dried oregano

Directions

Peel eggplant and cut up into large pieces.

In a roasting pan, add a little olive oil, a large can of tomato sauce, salte to taste, and the herbs. Stir together.

Place the eggplant in roasting pan and coat with mixture.

Roast in the oven at 350°. Check after about 20 minutes.

You want the eggplant to be soft and cooked completely through.

Serve over pasta or as a delicious side!
