Watermelon Basil Vinaigrette

Ingredients
4 c. fresh watermelon, chopped and drained
1/4 c. red onion, diced small
2 TB honey
1/4 c. champagne vinegar
2 TB fresh basil, chopped
1 TB fresh parsley, chopped
salt and pepper to taste
3/4 c. canola oil
Directions
Combine watermelon, red onion, champagene vinegar, basil, and parsley in a blender.
Pulse on and off for about 30 seconds until combined.
Add salt and pepper to taste.
While the blender is running, slowly add the oil. (See this site for a great explanation of how to emulsify oil into dressings.)
Serve over mixed salad greens and garnish with watermelon slices.
