Broiled Parmesan-Basil Tomatoes

Ingredients

5-6 medium-sized tomatoes

8-10 sprigs of fresh basil

1 cup Parmesan cheese, grated

1/8 cup olive oil

1/4 cup vinegar

1/4 tsp freshly ground pepper

1/8 tsp salt, if desired

Directions

Prepare Basil & Tomatoes; Marinate 3-4 hours

Wash fresh basil and pat dry. Using cutting board and chopping knife, chop basil and stems into small pieces. Set aside.

Wash and dry tomatoes. Discard stems. Slice tomatoes into thin, round slices (about 1/8" thick).

Place tomatoes into marinating bowl. Sprinkle them with pepper, salt and basil. Pour vinegar and olive oil over the tomatoes.

Cover bowl with aluminum foil. Place bowl in refrigerator 3-4 hours to marinate. Turn the tomatoes once or twice during the process so tomatoes are well marinated.


Bake

Pre-heat oven to 350°.

Line a cookie sheet or baking dish with aluminum foil. Spray with cooking spray.

Place tomato slices on cookie sheet or baking dish. Slices should lay flat and not overlap each other. (You'll have to bake & broil in batches.)

Bake the tomatoes for ten minutes, flipping the tomatoes after six minutes. Remove dish from oven.

Turn broiler on high.
 
Top each tomato slice with about two teaspoons parmesan cheese. Spread cheese so that it covers the top of the tomato. Place dish as far away from the broiler element as your oven allows.
 
Allow cheese to melt, crust over and lightly brown before removing pan from oven. Do not let cheese burn (3-4 minutes). Use a metal spatula to remove tomatoes from dish. Serve tomatoes hot and bubbly.
