Baked Fish in the Style of Spetses

I have made my own variations here to the original recipe.

According to my Mediterranean recipe book, on the island of Spetses (in Greece), this method of preparation is used for all sorts of fish.

Ingredients

2 cod or hake steaks

1-2 sprigs fresh parsley

1/4 c. breadcrumbs

Salt

Pepper


For the Sauce

3 TB olive oil

6 TB white wine

1 garlic clove, crushed

2 TB finely chopped fresh parsley

1 fresh tomato, peeled, seeded, and diced

Directions

Mix all the sauce ingredients in a bowl; add salt and pepper to taste. Set aside.

Preheat the oven to 375°.

Rinse the fish steaks, and pat them dry with papertowels. Place the steaks side-by-side in a lightly greased baking dish (use non-stick spray).

Sprinkle the parsley and a little salt and pepper over the steaks.

Spoon the sauce over the fish, distributing it evenly over all the fish. Then, sprinkle over half of the breadcrumbs.

Bake for 10 minutes, then baste with the juices in the dish, trying not to disturb the breadcrumbs.

Sprinkle the remaining breadcrumbs over the fish, then bake for another 10 minutes.
