Venetian Chicken

Ingredients
Coating
1 tsp sweet paprika
1/4 c. all-purpose flour
1 tsp dried basil
1/4 tsp salt
1/4 tsp pepper
3 1/2 lb boiler-fryer chicken, cut up
4 dried mushrooms
1/4 c. sun-dried tomatoes, chopped
1 small onion, chopped
Sauce
2 TB red wine
8 oz canned tomato sauce (plain)
1 TB lemon peel, freshly grated
Optional Topping
Parmesan cheese
Fresh parsley, chopped
Directions
Rinse the chicken, and pat it dry with paper towels.
Combine coating ingredients (paprika, flour, basil, salt, and pepper).
Coat the chicken pieces with this mixture; set aside.
Rinse mushrooms, and break them into small pieces. Remove and discard stems.
Place mushrooms, tomatoes, and onions in a slow-cooker.
Place the chicken in the pot on top of these items.
Combine the sauce ingredients (wine, tomato sauce, and lemon peel).
Pour the sauce over the chicken.
Cook on low 5-6 hours until chicken is tender.
Serve over pasta.
If desired, top with Parmesan and freshly chopped parsley.
