Zucchini Carpaccio

A light summer salad.

From the kitchen of:



1/2 tsp lemon zest

2 TB olive oil

1/8 tsp salt

1/8 tsp black pepper

2 large zucchini

1 ripe avocado, thinly sliced

1/4 c. salted, roasted almond slices OR pine nuts


Mix together first four ingredients; set aside.

Slice the zucchini paper-thin, using a very sharp knife or an adjustable blade slicer.

An a large serving platter, arrange the zucchini slices in overlapping layers with the avocado slices.

Drizzle the lemon dressing over all the vegetables, and sprinkle the nuts on top.
