Potato, Squash, Tomato Side Dish (Potsquatom?)

Ingredients
1-2 TB olive oil
1 medium onion, diced
1 clove garlic, minced
3 medium potatoes; skin on, cubed
4 medium yellow squash, cubed
3 medium tomatoes, cubed
1 green pepper, chopped
Salt, to taste
Pepper, to taste
Directions
Heat the olive oil in a large pan (or wok).
Stir-fry all the veggies together until the potatoes are soft, about 30 minutes.
Try with a sprinkle of cheddar cheese. Makes a great veggetarian entree! This dish would also work well as a side dish or with chicken added to become a hardier entree.
