Stuffed Acorn Squash

Ingredients

6 acorn squash

2 cans mild enchilada sauce

1/2 lb. grated Monterey Jack cheese (or a cheese blend)

1 lb. ground beef or turkey, cooked

1 lb sausage (Italian, hot Italian, turkey sausage, whatever you'd like), cooked

1 chopped onion

2 cloves garlic, chopped

Directions

Cut acorn squash in half and remove seeds. Parboil until tender, and drain.

Cook ground beef or turkey and sausage; drain and then add onion and garlic. Cook until tender.

Combine with enchilada sauce.

Fill acorn squash with the mixture and top with cheese.

Bake at 350° approximately 30 minutes.
