Butternut Squash and Red Pepper

Ingredients

7 c. cubed (1") peeled butternut squash (about 3.5 lb)

1 1/2 c. 1" pieces red bell pepper

3 TB minced fresh parsley

1 TB minced fresh rosemary

2 tsp olive oil

3/4 tsp salt

2 garlic cloves, minced

Cooking spray

2 TB grated fresh Parmesan cheese

Directions

Preheat oven to 450°.

Combine all but the cooking spray & Parmesan cheese, tossing well (squash, pepper, parsley, oil, salt, and garlic).

Coat a 13x9 baking dish woith cooking spray, and place the mixture in that dish.

Bake for 30 minutes or until tender.

Sprinkle with cheese, and serve.
