Lasagna Rolls

Ingredients
8 lasagna noodles, cooked according to package directions
1 (8 oz) package shredded Mozzarella cheese
1 (15 oz) container Ricotta cheese
1-2 TB chopped fresh parsley
1/2 tsp salt
1 pint seasoned tomato sauce
Directions
While the noodles are cooking, preheat oven to 350°.
Lay the prepared noodles flat on a cookie sheet.
Mix together the cheeses, parsley, and salt. NOTE: You may want to reserve a bit of the mozzarella cheese to sprinkle on the rolls before baking them.
Divide the cheese mixture into 8 equal parts, spreading one part all along each noodle.
Roll the noodles up, and line them up in a baking dish. If you are not baking them all right now, just pop the extras in a freezer bag.
If you'd like, sprinkle a bit of extra Mozzarella on top of the lasagna rolls after they have the sauce on them.
Pour sauce over the lasagna rolls in the baking dish, and bake at 350° for 25 minutes, or until heated through.
I find that 2 rolls is plenty per person.
