Breakfast Bites

Ingredients

 Group One

1 c. wheat flour

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp pumpkin pie spice (though I used 1/2 cinnamon, 1/4 cloves, 1/4 allspice)

1/4 tsp salt

 

Group Two

1/2 c. canola oil

1/2 c. packed brown sugar

1/4 c. granulated sugar

1 egg

1 c. regular rolled oats

1 c. finely shredded carrots

1/2 c. raisins


Filling

6 oz reduced-fat cream cheese, softened

2 TB maple syrup

Directions

Preheat oven to 350°F.

Line 2 large cookie sheets with parchment paper.

 

Mix group one together; separately, mix group two. 

Drop dough by spoonfulls on to cookie sheets - you should get about 24 cookies.

Bake for 10-12 minutes.

 

In a small bowl, mix the cream cheese and syrup.

 

Cool the cookies completely, then spread 1 TB of the filling on 1/2 the cookies.

Top with the remaining cookies, making 12 little sandwiches. 

 

Wrap and chill up to 3 days.
