Lentil Salad

Ingredients

 2 c. dried lentils

1 TB olive oil

2 tsp Country French Salad Dressing mixed in 2 tsp water, optional - - I used Creamy Pepper Dressing mix

1/4 - 3/4 tsp salt - optional, to taste - use if not using salad dressing mix

2 oranges, peeled and sectioned

1 clove garlic, minced

2-3 TB lime juice (juice of 1 lime)

3 TB balsamic vinegar or flavored balsamic vinegar

1/4 c. minced red onion

1/2 tsp each grated orange and lime rind

1/4 c. currants or raisins

1 carrot, peeled and finely minced

1 red or yellow pepper, finely minced

lettuce - optional

Directions

 Cook the lentils in gently simmering water until tender, 10-20 minutes, depending on how large the lentils are. Taste one if unsure - just like pasta! Drain well.

Place in a roomy bowl and add the remaining ingredients. Mix well to combine. Serve at room temperature or chilled on a bed of greens.
