Coconut Corn Salad

Ingredients

 3 TB unsalted butter

5 ears of corn, shucked

fine grain salt

3 TB fresh thyme leaves

1 c big coconut flakes, well toasted

1 c sliced almonds, well toasted

3 TB chopped red onions

big squeeze of fresh lemon or lime juice

Directions

 Melt the butter in a large skillet over medium heat.

Add the corn, sprinkled with salt. Stir well, and cook for just a minute. 

Stir in half the thyme, and then transfer the corn to a large serving bowl.

Just before serving, add most of the coconut, most of the almonds, all the onions and citrus juice, and the rest of the thyme. Stir well.

Season to taste wtih salt, and serve topped with the remaining coconut and almonds (and another bit of juice if needed).
