Grilled Shrimp with Cilantro Sauce

Ingredients

 1 1/2 c fresh cilantro leaves

4 tsp minced fresh gingerroot

2 garlic cloves, peeled

3 TB plus 1 1/2 tsp canola oil

1 1/2 tsp lemon juice

6 uncooked jumbo shrimp (1/2 pound), peeled and deveined

1 tsp lemon-pepper seasoning

Directions

 In a small food processor, combine the cilantro, ginger, and garlic. Process until cilantro and garlic are chopped.

While processing, gradually add oil and lemon juice in a steady stream until smooth. Transfer to a small serving bowl; set aside.

Coat grill rack with nonstick cooking spray before starting the grill. Thread shrimp onto two metal or soaked wooded skewers. Sprinkle with lemon-pepper. 

Grill, uncovered, over medium heat for 5-8 minutes on each side or until shrimp turn pink. Serve with cilantro sauce.
