Summer Pasta Salad with Tomatoes and Zucchini

Ingredients

 16 oz uncooked elbow macaroni

4 c grape tomatoes, cut in half

2 c (1 small) zucchini, sliced and quartered

1/2 c red onion, finely chopped

7 TB light mayonnaise

2 1/2 TB red wine vinegar

2 TB Greek yogurt

2 tsp Dijon mustard

1/4 tsp oregano

1/4 tsp garlic powder

salt and pepper

Directions

 Cook pasta in generously salted water; draine and rinse with cold water. 

Combine onions, mayonnaise, vinegar, yogurt, mustard, oregano, and garlic powder.

Mix in all remaining ingredients, including the cooked and cooled pasta. 

Tip: you could use ranch dressing as teh dressing, or substitute sour cream for the yogurt. If you don't like creamy dressings, try fat free Italian dressing. 

Tip: other great veggie additions include cucumber, olives, and chopped peppers.
