Ingredients
4 servings boneless, skinless chicken breast (4 oz. raw is a serving) - slice in 1/2" x 3" strips
1/4 lb thinly sliced hard salami
fresh basil
Marinade:
6 TB five-cheese Italian dresing (or something similar)
2 TB lime juice
1 tsp Worcestershire sauce (if you want, use the white kind, for chicken)
Sauce:
1/2 an avocado, mashed
2 TB minced cilantro, at the most
1 green onion, chopped
2 tsp lime juice
2 tsp mayonnaise
1 clove garlic, minced
Directions
Marinate the chicken for about an hour.
Drain and discard the marinade.
Cut the hard salami (which is WAY cheaper than prosciutto, which was called for in the original version of the recipe) into halves.
Lay a piece of chicken on top of a piece of salami, then lay on a basil leaf, and roll up with the salami on the outside.
Put meat rolls on kabobs and grill about 5 minutes per side.
For the sauce, mix all ingredients together in a food processor ... or just do a really good job of mincing and mixing.
