Ingredients
2 c flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 c shortening
3/4 c buttermilk or sour milk
Sour Milk
Put 1 TB vinegar or lemon juice into a one-cup measuring cup. Fill with milk or cream. Let stand a few minutes before using in the recipe.
Directions
Heat oven to 450°F.
Stir together dry ingredients then cut in the shortening (or use fingers like Mom).
Make a well in the middle; pour milk into it. Stir in milk to make a soft, puffy dough. It will gather up into a ball.
Round up the dough on a pastry cloth covered w/ a handful of flour.
Bring up each corner of the material and press into the dough, one at a time. Knead a few more times just by hand.
Sprinkle a bit of flour over the dough, then pat or roll dough to about 1/2 thick - about the height of the top joint of your pinky finger. Mom's are more like 3/4 thick though.
Cut and place on an ungreased baking sheet. Put any thinner ones in the middle. Have sides slightly touching.
Bake in the middle of the oven. If usign 2 pans, switch halfway through.
Bake 10-12 minutes or until golden.
